Chef Gabe’s Seared Scallops With Collard Greens and Bacon Pork Gremolata

Our talented July Chef of the Month, Chef Gabe shared his delicious Seared Scallops w. Southern Collard greens and Smoked Bacon Pork Panko Gremolata recipe! This award-winning Chef’s dish is infused with rich flavors – we truly can’t get enough. Find his recipe below!

Scallop Ingredients

  • 5 Fresh Diver Scallops (U10)
  • ½ Fresh lemon
  • 3 TBSP Butter
  • Kosher Salt
  • Fresh Ground Black Pepper
  • 1 branch Rosemary
  • 1 clove Garlic-smashed

Collards Ingredients

  • 1 Bunch Collard Greens- destemmed
  • 1 cup Chicken Stock
  • 3 Strips Raw bacon- diced
  • 2 cloves Garlic-minced
  • Kosher Salt
  • Black Pepper
  • 1 tbsp Apple Cider Vinegar

Gremolata Ingredients

  • ¼ cup Pork Panko
  • ½ cup crushed up Bacon
  • 1 clove Garlic- Grated
  • Zest of 1 lemon

Garnish Ingredients

  • Fresh Truffle- Preferably white Truffle
  • Bright Fresh Microgreen- Chefs Blend
  • 1 Bunch Seafood Mushrooms
  • 2 tbsp. butter
  • ¼ cup sake
  • 2 tbsp. Soy Sauce


  1. Place sauté pan over medium heat and add bacon for greens, remove bacon, but leave fat in the pan. Add garlic and cook for 15 seconds then add the greens.
  2. Add vinegar and cook for 15 seconds, add the chicken stock and reduce to medium low heat. Cook until tender. Season to taste.
  3. Mix together ingredients for gremolata in a bowl and toast in a pan over medium heat. Remove and place in a bowl.
  4. Over medium high heat, place a sauté pan big enough for the mushroom and heat. Add butter, once melted, add mushrooms and cook until they start to get a bit brown. Add soy and sake and cook until sauce in almost completely gone. Remove from pan immediately.
  5. Heat a nonstick pan over medium high heat and add 2 tbsp. olive oil. Pat scallops dry with a paper towel and season with salt and pepper. Place in pan clockwise starting at the top of the pan. Sear until you get a rich golden color and then flip.
  6. Add butter, rosemary and garlic and reduce heat to low. Baste scallops for 30 seconds to 1 minute-depending on how think your scallops are. Squeeze lemon over scallops and remove from the pan.
  7. Plate with each scallop sitting on top of gremolata. Shave fresh truffle and top with microgreens. Enjoy!

A good ol’ hearty bowl of chili is often underrated. Luckily for us, Chef John Wilson is sharing his delicious Smoked Shoulder Bacon & Black Bean Chili recipe- perfect for lunch or dinner! Get his recipe below!


5 slices smoked shoulder bacon diced

1 medium onion chopped

3 cloves garlic chopped

1 pound ground beef

3 dashes Worcestershire sauce

1 teaspoon cumin

1 teaspoon chili powder

1 teaspoon dried oregano

1 (16-ounce) can crushed tomatoes

1 (16-ounce) can black beans drained and rinsed

Sour cream (for garnish)

Grated cheddar cheese (for garnish)

1 bunch of scallions (for garnish)


1. Add diced bacon to a heavy-bottomed stockpot over medium heat (save a small amount of bacon for topping/garnish).

2. Cook until crispy, then add in onions and garlic, and cook until tender.

3. Add ground beef and cook until done.

4. Drain off any grease and place ingredients back into the stockpot over medium heat.

5. Add seasonings, ½ tomatoes, ½ black beans, and chicken stock, gently medium puree (not completely pureed), then add the rest of the tomatoes and black beans.

6. Reduce to a simmer and allow to simmer for about 20 minutes.

7. Serve with sour cream, grated cheddar cheese, and scallions on top for a tasty garnish.

Bacon Fest 2013 Recap

Bacon Fest 2013In case you missed the action, here’s a recap of Florida’s Inaugural Bacon Festival. Bacon Fest Florida, 2013 was held at the Seminole Coconut Creek Casino on Saturday, February 23rd from 6-11pm. It was hosted by Chef Todd Fisher, Discovery’s Destination America TV Show, “United States of Bacon”. Over 20 South Florida restaurants turned out to the event wearing their chef coats, giving out samples of their… unconventional, yet delicious, bacon-inspired dishes. In order to showcase their creativity and culinary prowess, vendors needed to come up with some out-of-the-box uses for bacon, other than the classic bacon-wrapped chicken. Of course, that dish was in attendance, but it took a backseat to some of the stranger concoctions, such as Maple Bacon Cupcakes, Bacon-infused Popcorn, and Peanut Butter Chocolate Covered Bacon, among others. There was even a food truck, Ms. Cheezious, handing out grilled goat cheese and bacon sandwiches.

Entertainment for the event did not disappoint, either – from Radio Station Power 96’s DJ Zog to actor Kevin Bacon’s band, The Bacon Brothers, to The Dan Band, from movies such as Old School and The Hangover. Other activities at the event included bowling, bean bag toss, and even a mechanical hog named Harley. Everyone walked around wearing plastic bacon bracelets, drinking bacon-flavored vodka and wearing their bacon-inspired merchandise, which were for sale at the “Bacon Merch” booth.

Overall, this sold out event was a great success, gathering thousands of bacon enthusiasts from across the state (and elsewhere). I can hardly wait to see what they come up with next year!
