Summertime calls for sweet treats. Our June Chef of the Month took the traditional madeleine recipe and added everyone’s favorite ingredient… chocolate. Enjoy this fantastic chocolate madeleine recipe and start baking to share these delectable sweets with your friends, family, clients, or customers.
Chocolate Madeleines
Ingredients:
3 eggs
1/2 cup sugar
1 tsp baking powder
3/4 cup flour
1/4 cup cocoa powder
zest of one lemon
1/2 tsp vanilla extract
1 pinch of salt
4 oz butter, melted and cooled
Directions:
- Preheat the oven to 400 F.
- Spray madeleines mold with non-stick spray and set aside.
- Whisk together the eggs and sugar until the mixture is pale and thick.
- In a bowl sift together the flour, baking powder, cocoa powder, salt, and zest.
- Add the dry ingredients to the eggs and sugar mixture. Mix until combined, add the melted butter and mix until smooth.
- Spoon batter into the molds and bake for 12 minutes.
- Cool on a wire rack.
