CHEF ABYSSINIA’S LOBSTER TOSTADA RECIPE

When in doubt, go for the Tostada! Chef Abyssinia, our talented September Chef of the Month has shared with us her Lobster Tostada Recipe. Tangy, sweet & fresh, this dish is ideal for any occasion. Get it below!

Poached Lobster w/ chipotle aioli & mango salsa served on a crispy tostada shell w/ guacamole

Yield: 4 servings
Total Time: 20 minutes

Ingredients

Poached Lobster

  • 4 Small lobster tails
  • Salt & Pepper
  • 1 Bay Leaf

Guacamole 

  • 2 Small ripe avocados
  • 1 Plum tomato, small diced
  • ½ Bunch cilantro, chopped
  • ½ Jalapeño, seeded & minced
  • ½ Small red onion, small diced
  • 1 Lime for juice

Mango Salsa 

  • 1 Ripe mango, peeled & small diced
  • 1 Red bell pepper, small diced
  • ½ Small red onion, small diced
  • ½ Lemon for juice
  • 1 Pinch salt & pepper
  • ¼ Bunch cilantro, chopped
  • ½ Jalapeño, seeded & minced

Chipotle Aioli 

  • ¼ c mayonnaise
  • 1 tbsp chipotle in adobo, diced
  • ½ Lemon for juice
  • 1 Pinch salt & pepper

Tostada Shell

  • 1 Bag of tortilla tostada shells-store brand tortilla chip cups
  • OR 4 corn tortillas to deep-fry
  • 2 tbsp Honey

Directions

Poached Lobster

  1. Bring a medium pot of water to a boil, add bay leave, salt & pepper to flavor water.
  2. Poach lobster tail 3-5 min until cooked, when done place in ice bath or cold water to cool.
  3. Remove lobster tail from shell & small dice, set aside in cooler.
  4.  In a small bowl, mix chipotle, mayo, lemon juice, salt & pepper to taste.
  5. Add diced lobster tail to the chipotle aioli mixture & place back into cooler.

Mango Salsa 

  1. In a small bowl mix diced mango, diced red onion, diced red pepper, chopped cilantro, honey, lemon juice & salt & pepper to taste, set aside.

Guacamole 

  1. In a small bowl mash avocado using clean hands or fork, add in chopped cilantro, diced tomato, minced jalapeño, juice of 1 lime, salt & pepper to taste.

Tostada

  1. Store brand tortilla shells, open bag & relax.
  2. To make your own tostada, heat a medium size frying pan w/ about 1 cup of oil. When oil is hot place corn tortilla in oil, frying one tortilla at a time for about 30 sec – 1 min. When tortilla is crispy, place on a tray with paper towel & sprinkle with salt.

Assembly

  1.  To assemble add 1 scoop of guacamole to the tortilla chip, top with lobster mixture & then garnish with mango salsa. Enjoy!

CHEF KRISTAL’S PAN SEARED SALMON, COCONUT RICE & MANGO SALSA

Wow. That’s the only word that we think gives this recipe any justice. Chef Kristal‘s Pan Seared Salmon, Coconut Rice & Mango Salsa Recipe is out of this world, and if the image above doesn’t make your mouth water, then we don’t know what to tell you! Read below and ‘wow’ your taste buds!

Ingredients

2 fillets of salmon

1 1/2 cup white rice

1 cup coconut milk

2 1/4 cup water

Salt to taste

1/2 onion, small diced

1 mango, diced

Half of red onion, diced

Green pepper, diced

Cilantro, one handful

Lime juice from half a lime

Pepper to taste

Olive oil

Directions

1. In a sauce pan, turn the stove on medium heat and drizzle the pan with olive oil.

2. Season the salmon with salt & pepper and pan sear on both sides for 5 minutes.

3. Drizzle olive oil into a pot and sweat the onions.

4. Add in the rice and toss the rice until it is coated with the onion and olive oil.

5. Add in the water, salt and coconut milk. Stir, cover with lid, and cook rice until the water has evaporated.

6. Chop up the red onion, mango, cilantro and green pepper.

7. Squeeze lime juice over this mixture and add 2 pinches of salt.

8. Toss and combine.

Delicious Salmon Sliders

I found this great recipe for Salmon and wanted to share this with you. I hope you enjoy it as much as I did.

Thai Salmon “Sliders” with Mango Red Pepper Salsa

For the sliders:

1 lb salmon fillet, skin removed
1 egg
2 large garlic cloves, finely minced
1 tsp fresh ginger, grated
¼ cup cilantro leaves, finely chopped
¼ cup green onion, chopped (light green and green parts only)
2 tsp soy sauce
1 tsp fish sauce
1 tsp sesame oil
½ tsp red chili flakes
olive oil (for frying)
1 package (12) small, soft dinner rolls (such as King’s Hawaiian)
butter or mayo as desired (for the rolls)

For the Salsa:

1 medium mango, peeled and chopped
1 small red bell pepper, seeded and chopped
1/3 cup red onion, finely chopped
1/3 cup cilantro leaves, finely chopped
juice of one lime
¼ tsp red chili flakes
salt and pepper to taste

 Preparation:

Prepare the salsa first to allow time for the flavors to blend. Mix all of the salsa ingredients in a small bowl and chill, covered, for at least half an hour.

Using a food processor fitted with a metal blade, pulse salmon until coarsely ground. Add egg and pulse until well mixed. Transfer salmon mixture to a bowl. Add garlic, ginger, green onion, cilantro, sesame oil, soy sauce, fish sauce and chili flakes and mix together thoroughly. Shape salmon mixture into 12 small patties and refrigerate, covered, for at least half an hour.

In a non-stick pan, heat olive oil over medium-high heat. Fry salmon patties until lightly browned on one side, about 2-3 minutes. Flip patties over and cook until lightly browned on the other side, about 2 minutes. Check to see patties are cooked through.

Toast rolls if desired and spread with butter or mayo or both. Place one patty on each roll and top with a tablespoon or two of salsa.
