Chef Oscar’s Ancient Grains Veggie

If you’re looking for a healthy and delicious dish, then Chef Oscar‘s Ancient Grains Veggie recipe is the way to go! Complete with fresh herbs and savory blends, this recipe contains all the the veggies and grains to satisfy your taste buds.

Ingredients

6 ounces ancient grains

4 ounces veggies (peppers, corn, heart of palm, sweet potato)

1 ounce thyme and mint mojo

2 ounces cilantro pesto

2 ounces red bell pepper sofrito

Directions

Use a blend of quinoa, farro, amaranth and lentils, cooked as per instructions on the packaging.

1. Heat the ancient grains and set on a plate or a bowl.

2. In a hot pan, sauté the veggies in hot oil until golden and add a mint sprig, a thyme sprig and a garlic mojo. (the sweet potato might have to be boiled before this point).

3. Remove the stems of the fresh herbs and set on top of the grains.

4. Place a spoonful of pesto to the right and a spoonful of red pepper sofrito next to the pesto.

Chef Gina’s Pesto Recipe

Roasted Pesto Potatoes, Pesto Noodles, Caprese Grilled Cheese with Arugula Pesto and Pesto Salad. What do all these delicious dishes have in common? Pesto.

Pesto is a delicious, yet simple sauce that can be bought at any supermarket or grocery store, but Chef Gina has a better idea. She has shared a great and simple-to-make pesto recipe that is guaranteed to enhance the flavor to any dish! Find her recipe below.

Ingredients

Fresh Basil(2 -3 cups, but I say you can never have enough basil)

Sometimes I’ll add arugula if I have leftover for some extra kick & nice color 

Pignoli nuts (about 2-2.5 tablespoons)

Fresh garlic (to taste)

Cucina Bambina Extra Virgin Olive oil

Parmesan cheese

Salt & pepper

Directions

1. Blend basil, pignoli nuts and garlic in a blender. Gradually add the olive oil and Parmesan cheese until desired consistency.

2. Season with salt & pepper to taste.

3. Enjoy!

Ms. Cheezious Fresh Pesto Grilled Cheese Recipe

Love grilled cheese? Our June Chef of the Month, Brian Mullins, shared some of his favorite grilled cheese recipes from Ms. Cheezious! Up first- Fresh Pesto Grilled Cheese!  Pesto Grilled Cheese

Ingredients:

4 slices sourdough bread
Salted butter, softened

8 slices mozzarella or provolone cheese
4 tablespoons basil pesto**

**To make the basil pesto:
2 cups fresh basil leaves, packed
1/2 cup freshly grated Parmesan-Reggiano cheese
1/2 cup extra virgin olive oil
1/4 cup pine nuts
2 garlic cloves, minced
Salt and freshly ground black pepper, to taste

Combine the basil, garlic, and pine nuts in a food processor or blender and pulse until coarsely chopped. With the machine running, slowly add the olive oil and process until smooth. Add the cheese and pulse until combined. Season with salt and pepper, to taste.

Directions:

Preheat your griddle or pan to medium heat.

Butter the outside of each slice of bread. Spread basil pesto on the inside of each slice of bread. Place the mozzarella or provolone cheese slices on top of one piece of bread. Top with the other slice of bread.  Place on the griddle or pan; cover with a metal bowl and let the sandwiches get a nice golden brown, wait 2 to 3 minutes. Flip, cover again and cook until the cheese is melted and the sandwiches are golden brown, 2 to 3 minutes. Serve immediately.
